Recipe: How to make Saba Mackerel Miso soup




Even for a Japanese it hasn't been typical to put fish in our miso soup, but it's becoming trendy to.


Japanese cook saba with miso a lot for example the misoni(味噌煮) so it actually makes sense to put the fish in miso soup. We usually put dashi in our miso soup, but using the juice of the canned mackerel, already contains dashi from the saba, and it gives a richer taste.


Today we introduced how you can upgrade your miso soup to be tastier and healthier using canned mackerel. 


How to make Saba Mackerel Miso soup


Ingredients

  • canned saba mackerel...1
  • Green Onions...1/2
  • Cabbage...60g
  • water...400cc
  • Miso...2 spoons

Instructions

  1. Cut the cabbate to 2~3cm squares, and slice the green onion diagnolly with a width of about 1cm.
  2. Preapare water in a pot and put in medium heat. Add the ingredients including the juice of the canned saba.
  3. Once the ingredients are cooked (5~10 min) turn off heat, and add miso.

It's more typical for us to put only vegetables in our miso soup, and putting fish in miso soups was something special to fisherman or seafood restaurants.


But Japanese are getting more health conscious while at the same time, very busy. So an easier way to put fish to our diet is being recognized, and canned fish is one of them.


We know that powder dashi has an artificial taste, but we also have less time to prepare dashi ourselves. That's why the juice from the fish can is something very handy.


Japanese choose canned saba because it's the cheapest option for us. If salmon is something you would prefer. it does the same kind of job.



Save time cooking and eating healthy at the same time!


This simple miso soup contains vegetables, soy beans, and fish which is rich in nutrients essential with a healthy diet.


In Japan we have a term "ichiju sansai"=一汁三菜 which means 1 soup, 3 vegetables. But as more types of food were introduced the 3 vege was divided to 1 主菜(shusai=meat, fish, or main dish) and 2 副菜=(fukusai which is vegetables, mushrooms, etc) 2 side dish.


This was believed to be important aspects to healthy living, and this miso soup can easily tick all the necessary components of Ichiju Sansai.
